Raspberry salad

Raspberry salad by CookkaNovaI love this salad. This is one of my favourites because of sweet and healthy combination. And I am impatiently waiting for raspberry season.

Ingredients for 2:

1/2 Red Oak Leaf lettuce
1/2 Lollo Bianco lettuce (you can also use your mix of lettuce)
100 g raspberries
100 g goat cheese (the yellow one)
25 g roasted almond flakes (without salt)
6 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp honey
1/2 lime (juice)
salt and ground pepper

Preparation:
Wash lettuce and raspberries. Dry gently with paper towel and add to the bowl. Cut the cheese into very thin slices and add to the lettuce. Sprinkle with roasted almond flakes.

Prepare dressing. Mix olive oil, balsamic vinegar, honey, lime juice, pinch of salt and ground pepper into the smooth texture dressing. Pour into the salad and stir.
